Using CaptureOne to process back-catalog of iPhone photos

I'm new to CaptureOne and loving it.

I'd love to use it to process the many old photos that I took with my iPhone--editing them, but mainly adding metadata and organizing them. Can anyone here suggest an easy workflow for doing that?

(While I have an iPhone, my main computer is a Windows PC and not a Mac.)
