Capture One needs a catalog to continue

Hi all, I'm new to this forum as I'm planning to switch from PSE to C1. Despite a lot of searching and watching, I haven't found a way to wrap my head around the issue of the location of my photo files. I'm a Windows user and have years of files stored in a year-month-day-title system. In addition, for several years I did use PSE's Organizer but I've let that get out of hand for the past two years.
I would greatly appreciate any suggestions or point me in the direction of how to learn/understand the navigation of creating "... a new Catalog or browse for an existing Catalog" (as the opening window directs) and then saving a processed file into the 2018 02 09 xxx system I've been using. I've watched several tutorials but haven't find how to grasp this new filing system. Thanks. Robt
