Capture One Pro 20 - customize toolbar doesn't work correct
In the current version of C1 it's not possible to place the "X"-button for delete into the toolbar. Also other tools do not stay where they where placed. This is totally annoying

Hi Stefan,
You could have a look at your toolbar when customising, and see if you have spaces or flexible spaces locking the possibility of inserting new tools. When you remove them, it becomes much easier to customise your toolbar.

Mh, I wouldn't post here if I hadn't tried everything. I have disposed all placeholders.

I had a similar problem, where trying to customize the toolbar left the "x" icon out of alignment and I couldn't change it (nor was it supposed to be in the toolbar). I was trying to modify the toolbar in one of my custom workspaces.
Creating a new custom workspace solved the problem and it's been fine since. However, to create the custom workspace I had to start from scratch—simply saving my workspace under a different name didn't allow me to modify it as I wanted. So since my workspace is complex and covers 2 monitors, I made screenshots of each tab layout, then started with the Default Workspace and modified it to look exactly like the desired workspace. Tedious, but solved the problem.
I also keep backup copies of the C1 App Support folder, so I had a backup of my custom workspace. Interestingly, the backup behaved as my original. I can only assume that something got corrupted when I created the original workspace several C1 versions ago, and the current version caught the problem. Since even the backup had the problem, I'm inclined to think that C1 20.1 did NOT corrupt the file, rather it got hosed somewhere else.

There does not seem to be a problem on Windows: I selected the Default workspace which does not have delate tool in it, right clicked on an empty part of the tool bar, selected customize and moved the delete tool from the drop down to its normal position on the tool bar. I can't see why it should not work the same on Mac.
By the way are you using icons and text or icons only?

"By the way are you using icons and text or icons only?" - Same procedure both ways - I will try Abbot's solution.
