Is it corrrect that in CaptureOne LE the option "proof destination" is disabled in the color managment window?

Which color space is then embedded in the TIFF or JPG file?

  Yes, it is.
  Whichever color space you have set for Destination / or Web AND at
  the Process tab, is embedded in the processed image file.
