You can find eyedroppers in Cursor tools in the middle of the toolbar. Long press left button on the eyedropper icon or right click it and choose "Pick Shadow (or Highlight) level" (Shortcut L).

Express for Sony is the free stripped-down version of Capture One. Pro for Sony is a cheaper Pro version that can edit only Sony raws.

i found the answer, in the preferences under the exposure tab, the channel needs to be set to rgb channel, not the color channels. without these eyedroppers you are unable to set the b/w point using levels.

Sorry, I hadn't understood properly what you meant. Under preferences, if you set Channel to "RGB", you've got eyedroppers on the RGB tab of Levels tool. If you set Channel to "Red, Green and Blue channels" you've got eyedroppers on every single channel tab and you can set the black and white point for one particular channel at a time. The eyedroppers in the Cursor tools bar I told you about in my previous reply reflect the choice made in preferences. In fact when you select an eyedropper in Cursor tools, the corresponding eyedropper in Levels tool is highlighted too. The only difference is, if channel is set to "Red, Green and Blue channels", the eyedropper tool maps all the three channels black or white points at the same time. So you can decide whether to set black and white globally or per channel.
