Saturation slider vs Color Editor
Is there any difference in performance between the Saturation slider in the Exposure tool versus the Saturation slider in the multi-color "slice" in the Basic Color Editor? I can see the Color Editor only goes up to +/- 80 instead of +/- 100, but is there any different way that saturation is handled in one or the other?

Yes - there is a lot of difference. The saturation slider on the exposure tab is "intelligent" in that it increases less saturated colours more than those that are already well saturated. (For decreases, it just decreases all colours equally.) It is rather like the vibrance control in Lightroom. But the slider for saturation in the colour editor just increases all colours to the same extent. It is more like the saturation slider in Lightroom. So you have a choice. You could create a cloned variant of an image and experiment by using the two different controls on two versions of the same image side by side to see the difference.
