That is the default behaviour. On a Mac you can get a choice of previous sessions/catalogs, and the opportunity to create a new one, by holding down the Alt key when you open C1. I'm not sure what the equivalent key is on Windows.

Every time I open Capture One, it launches the last session I had open. I don't want it to do this. I want it to present some choices so I can pick what I want to do. Usually I want to open another session or create a new one.

Is there a setting I can change to make the program stop opening the last session I was working on?

I looked through the Preferences (General) but did not see anything relevant.

In addition to Ian's suggestion, if you want to open a specific session you can navigate to it in Windows and then start C1 by clicking on the cosession file.

You can also have more than one session open at the same time. So even if C1 starts with a session you no longer wish to work on you can start a second session and then use the File > Close Window option to shut down the one you no longer wish to be open.
