Your aren't missing anything. The catalog just doesn't work like you expect it to work.
You must add the new subfolder within CO first.

... or after adding the folder to Capture One, you can import the images in it to your catalog using the Import function.

Generally speaking, it is much better to work on your image folders from Capture One rather than from the Finder. Doing that will make you sure that Capture One won't lose any path. 0
