Answered my own question, it only applies the new profiles automatically to fresh imports into the catalogue. Quite right to, I might have done something specific to existing files that I did not...

It works for me if I use the big copy and apply arrows on the far left of the toolbar. This is with V12.0.2 on Windows 10.
