Click the Crop Tool's reset button (looks like a left curling arrow pointing to a horizontal line). Or just click in an empty area outside of the crop while the Crop Tool is active.

I use the scroll wheel on the mouse to zoom. Be sure the pointer is on the image. You can also scroll the mouse when hovering over settings to incrementally change them.
