How do I change the language in Capture One?
ANSWER
NOTE: Currently, Capture One can work with the following languages:

For macOS
The software language will depend on the language of your operating system. If you run your computer in English - then the Capture One interface will be in English too. In order to change it to another language, just change your OS language under System Preferences -> Language & Region and restart your computer.
You can also change the language of Capture One in the Terminal. Launch the Terminal and type the following command in case you have Capture One 21 (14.x.x):
defaults write com.captureone.captureone14 AppleLanguages '(en)'
NOTE: Substituting 14 to 13, 12, 11, 10, etc. will make it work for the corresponding version of Capture One. You can change en to another language code (see the table above) according to the ISO 639 standard.
Then restart Capture One.
For Windows
Activate Capture One application, then go to Edit -> Preferences -> General.
Once you've chosen the preferable language, restart the application:

Hi Hans Jürgen,
the adjusted terminal command (using 13 instead of 12) also didn't work for me to change the app language. It just did reset (some) Capture One settings.
I just found out under macOS 10.15.x you can set an app specific language.
Systemsettings --> Language --> Apps
Systemeinstellungen --> Sprache & Region --> Apps
then add Capture One 20.app and set it to English.
I hope that works for you as well.

Unfortunately not working with Capture One 20 Fujifilm, Build 13.1.0.172 on macOS Version 10.15.4.
Just use com.captureone.captureone13 identifier for Capture One 20 or a more general variant:
defaults write $(mdls -name kMDItemCFBundleIdentifier -raw /Applications/Capture\ One\ 20.app/) AppleLanguages "(en)"
