N.B. Capture One will not work on Beta (and unsupported) operating systems. Always check this compatibility table prior to performing an OS update/upgrade. An unsupported OS can lead to a host of stability and performance issues - even worse, it could result in lost work.

Get a license
If you like Capture One, get the license key to be able to use the software once the trial period expires - https://www.captureone.com/en/store
Perpetual license - you pay the full amount at once and obtain a lifetime license. You would be able to activate any previous version of the software with the perpetual license as well. For instance, if you purchase a Capture One 11 Pro license, you can use it to activate Capture One 10, Capture One 9, Capture One 8, etc. However, upcoming major upgrades of Capture One will be paid upgrades.
Subscription license - you have to make payments monthly or annually. As long as you make regular payments, a subscription license works with the latest upgrade or update. Subscription licenses are also backward compatible but the earliest version they can activate is Capture One 11.3.2.

If I buy the Capture One Pro for Fujifilm can I "upgrade" and add support for Nikon/Sony/Canon in the future? Or would I have to purchase the software separately?
I have the same question! I have a Fuji subscription but I’d like to upgrade to Pro. I can’t figure out if it’s possible
Have you logged into your account and checked the information provided in the "Upgrade your Licence" section?
That would normally offer guidance about what further options are open for you.
Yes, it says there are no upgrades available. I tried manually inputting the license key and it says "This key is a Capture One Pro subscription key, it can activate the latest Capture One Pro software version" - but it's a subscription license for Capture One for Fujifilm
If it is a subscription license for the full Pro version there would be no upgrade available. You are already in possession of the most comprehensive C1 license that is publicly available to purchase.
If you deactivate whatever you already have activated and then apply the activation code you used for the manual input you should have the full Pro options based on your observations above. On a subscription basis so with automatic access to version updates as well as intermediate releases.
If you don't have that than I would suggest that you you use the "Submit a request" feature on the Community pages and choose the appropriate option to discuss licenses with the relevant Support Team.
If you wish to test whether the licence can be used for Full Pro you will likely need to deactivate the current license and re-activate with the one you just used that claims to be full pro subscription to see what happens
How have you checked whether the full Pro functionality os available to you (or not)?.
It’s just Fuji files that work for now, which is why I was looking to upgrade. I’ll try the re-activation trick and then file a support ticket if it doesn’t work
I filed a ticket and heard back from support: *only perpetual licenses can be upgraded,* not subscriptions. I find that a bit baffling and disappointing. This restriction should be made crystal clear for people like me who switched from a perpetual to a subscription, otherwise I would not have done so.
Got a question about the licenses, how come there´s no standalone version for Canon?
Seems kind of weird that I as an enthusiastic hobby photographer with the need for tethering is "forced" to buy the full pro license to be able to use my canon camera with C1 for twice the price of a sony/ nikon shooter...
I would very much like to not use lightroom and go for C1 instead but feel I don´t use it often enough to justify the montly cost for a sub or pay for the full Pro license.
If I could pay for a standalone Canon version I would, but paying for the all camera version seems a bit steep.
Why not offer a cheaper non professional edition for non commercial work?

You can surely use it also for activating Capture One on your Windows computer but you need to deactivate it first on your MacBook Pro.

If you are paying monthly for a perpetual license your upgrade options should be accessible through your Capture One Account pages.
If you are on a Subscription license then, as I understand it, you start a new subscription for the Pro version for all cameras and cancel (or do not renew) the previous Fuji-specific license.
