Workspace layout lost again.

I don't believe your workspace is lost.  Well, maybe not lost.  Did you ever save it as a saved workspace?  If so it is not lost.

Which workspace you are currently using is an application preference and that preference seems to be reset to the default workspace whenever a new version of Capture One is installed.  If you use the Window -> Workspace menu you should see your saved workspace.  Select it.   Capture One will remember your choice and show that workspace until you change it to something else or a new version of Capture One is installed.

Hint: when making changes to your workspace don't forget to save it again.   I usually discover I've forgotten that step when restoring my chosen workspace after installing a new version and seeing it is not quite what I'd been using.

Thanks, Markco for the suggestion. I have several saved workspaces for different workflows. For some reason with this update, some of the older workspaces got corrupted somewhere somehow and would not load I discovered after posting my original comment. Luckily I have other copies created in v21.

The only reason I bring this up is that it just started happening in v20 & 21 defaulting back to the original install. Previously v8 to v12 my workspace wouldn't default back to the original install.

It's not a big deal redundancy is your friend.

I've also experienced saved workspace corruption in both v20 and 21. In my case, it's always a particular workspace that spans two monitors. The corruption's consistent: C1 "magically" inserts an icon or 2 into the main toolbar, and when I go to customize the toolbar to get rid of the problem, the inserted item is offset vertically from all the rest and can't be removed.

Workspaces are saved as plist files. I looked at the corrupted plist with BBEdit (the free version) and found multiple entries for the unwanted icons. Removing them solved the problem for a while, but eventually C1 decided to corrupt that workspace again. I finally solved the problem by locking the workspace in Finder, which of course also means that I can't modify/save the workspace until I manually unlock the file.

The other thing I've learned to do is save copies of all of my workspaces in a different directory so if I experience corruption again, all I need to do is copy the copy back to the original folder.
