Unable sync metadata (particularly date)
I understand Capture one does not allow to change a photo's date. This, it appears, can be accomplished with an exif editor but, then, the date can't be seen in an updated or synchronised file.
Where am I going wrong?

C1 doesn't synchronize your changes automatically, you have to right click on that picture and load metadata again, when you'll see any changed values.

What is a "synchronised file" in this context?
I never do metadata work in C1 and I have not experimented with it for some time, but C1 has two terms for transferring metadata from files to catalog/session and from catalog/session to a XMP file (sidecar). If I remember this correctly, C1 "synchronizes" metadata by writing to a XMP file, and C1 "loads" metadata when reading from an image file or XMP file.
C1 loads metadata from image file and/or XMP file when the image file is first seen, for catalog that likely means import. If metadata changes in the image file or in the XMP, you should normally be able to see the change in C1 if you select the image, open the metadata tool, click the tree dots button (top right in the tool) and select Reload Metadata from the pop up menu.
If you have made changes to metadata in C1 and want some other application to find the new metadata in the XMP file, follow the same procedure but select Sync Metadata from the pop up menu.
You may have to experiment a little and I suggest you first edit preferences -> Image and set Auto Sync to None to better see what happens when an automatic mode is not interfering with your manual reload and sync.
