As you've updated to the 10.6.8 Operating System, you need to update to Capture One 6.3.1.
The release notes of the Apple Update list the changes made and among them they list several camera / photography related components. This has lead to some fundamental changes in the way these cameras communicate with the Computer.

The hang-up, however is that the tethered capabilities of the Canon 5D hasn't been supported by Capture One software since version 5.2.1. This is due to Canon dropping it from the recent SDK. There is some functionality in Capture One 6.3.1 but it is unfortunately not officially supported. Tethering with the Canon EOS utilities and using Capture Ones 'Hot Folder' is the best option for stability in tethered capture.

P.S, the 'Type8Camera' does not apply to this type of communication protocol.

    Hope that helps.

    Thanks Drew
I have upgraded to 6.3.1 - seems to work better if I turn off camera between opening for some reason

Note that the current version of EOS Utility 2.10.2 has issues with OS X 10.6.8, as Canon stated on their download page. Regarding us with a 5D mkII I can conform issues like hanging.

I think that for the 5D you best use an older version of EOS Utility because 2.10.2 does not support the 5D (same reason as CO Pro 6 does not support the 5D for tethering, see Drew's post). However, I do not know which version of EOS Utility supports the 5D and OS X 10.6.8.
