Catalogs and Sessions

I'm currently using C1 8 (for Sony Pro) on Windows 10 and have decided to tidy up the location where I store my images and was looking at using Sessions for easier management.
I usually copy my images direct from camera straight to my HDD and have C1 import the images straight into a catalog, leaving them where-ever they are currently stored, but I have started looking at different ways of working with C1 and unsure of whether to use Sessions or Catalogs.
I have been messing with creating some mini sessions from particular folder structures, telling C1 to use the date taken as the folder name, so easily spotted within the session (especially if wish to add more images to that session at a later date). I've then imported these into a main catalog. What I did notice is that when using sessions it copies the files across to the capture folder, so would it be safe to then delete the originals (remembering never to delete the images in the capture folders).
I then performed a test using the catalogs and created two catalogs and imported these into a master catalog, but noticed that when you do this it does not import all the images (it is always one short) and you have to synchronise the folders again to import the missing file, yet this file is in the original catalog.
Would it just be simpler to have a single catalog and just use synchronise to import new images
