    It's a Mac OS setting. Open the utility called Image Capture (the easiest is to use spotlight: CMD+Space and type Image capture). With your iPhone connected you can set it not to open Capture One when connecting it.

    Again Mikkel is pretty much right on the Money.
    When you first installed and launched Capture One you were asked if you wanted to Automatically Launch when you connect a Digital Camera. If you clicked Yes then, as your iPhone is also a Camera, the software will launch. It's best to cover both bases, the Image Capture setting (should be in the preferences of that software) as well as Capture One. To edit Capture One's setting just quit the program and delete the PLIST. You'll get asked the same "Do you want to...." when you launch Capture One again.

    Both previous replies are totally correct and apply to 10.6 (Mikkel) and 10.5 (Drew) respectively. To set Image Capture not to open an application on media connect, there are different instructions whether you are on OS X 10.5.x or 10.6.x
