It's driving me crazy, but I know there has to be a way to clear the sessions folder drop down menu all at once.

There isn't an option for this in the software (on the wish list) but there is a way which I use.
All settings in capture one is stored in ˜/Library/Preferences/com.phaseone.application.captureonedslr.plist
I normally set up Phase One exactly as I want it and then save this file.
If I have changed around in capture one with outputs, settings, sessions etc.
then close Capture One, simply take the saved copy and replace the existing one and when you start Capture One it will be back with to vanilla mode.
You can also just delete the file, now Capture One will be back to factory settings.0
