Mask by colour picker?
Is it possible to create a mask using a colour picker? If I have a uniform sky for instance can it be clicked to select it?

In Capture One Pro you can.
In the Color tab, click the Advanced Tab in the Color Editor tool.
Use the "Pick Color Correction" dropper tool to select the color.
Adjust the dimensions of the segment, if necessary.
Click the triple-dot button and select "Create Masked Layer from Selection".
Now switch to the Local Adjustments tab.
Select the new layer in the list.
If necessary, use the Erase tool to remove unwanted parts of the mask.
Use the local adjustments controls to modify the layer's appearance.

In addition to Richard's excellent proposal here is a suggestion from a couple of years ago before the colour masking option became available.
It offers another way of doing what you want and I think both approaches are valid and complementary in many ways.

There are a few other ideas around as well - masking and changing white balance for example. Really - whatever works best for your needs!
