There's not one for Copy mask (since you have to start with the destination, then choose the source), but you can set Invert mask via Edit Keyboard Shortcuts, Other > Layers, Invert Mask

For what it's worth, unless you're working with large catalogs (and large collections within those catalogs), 32GB of RAM will more than suffice.
