Catalog versus Session?
I have all of my photo shoots on one RAID drive; in one folder with each shoot in a folder labelled with date/model name. I'm used to Adobe Bridge which allows me to peruse the folder and access all of my shoots.
How should I be integrating Capture One into my workflow? I am totally lost.

There are a few things that would fit your data storage and approach quite naturally.
Approach 1 - One Master Catalog and a Session for each new shoot
A) Set up a catalog with referenced image files (Images stored where they are now) for every shoot in a folder labelled with date/model name. Make every shoot a Project
B) Set up a session for each each new shoot in a folder labelled with date/model name.
As you finish working a new shoot import the session into the catalog. Or just import the best images.
Approach 2 - Only Sessions
A) Set up a session for each each new shoot in a folder labelled with date/model name.
B) Set up a session for every shoot in a folder labelled with date/model name.
Approach 3 - One Master Catalog
A) Set up a catalog with referenced image files (Images stored where they are now) for every shoot in a folder labelled with date/model name.
B) For each new shoot store the image files the same way in folders on the RAID drive (as you have been doing), and import them into a new Project in the catalog for processing.
I'm using approach 3, but if you get your new images while travelling and on a smaller machine, then Approach 1 or 2 makes more sense.
You can mix and match. Just beware of the following:
- While it is fairly simple to import a Session into a Catalog, copying from Catalog (including image adjustments and metadata content ) into Sessions is a tricky and involved proceedure.
-Once you import images from a session to a Catalog, or from one Catalog to another, the adjustments and Metadata at that time are copied. It is not a live connection. E.G. if you make editting adjustments in the Session after importing into a Catalog, these subsequent adjustments are not shown in the Catalog.0
