In Capture One 20, select all of the images you want to reset.  Then go to Image > Process History > Clear from Selected.

I've had this same problem. Restarting Capture One sometimes fixes it.  A lot of glitches happen when I do batch renames on a tethered shoot--it resets white balance and exposure settings for futur...
