Because all of those things are what most users (including professionals - you're not the only one who uses Capture One) expect from the software as a starting point for their conversions.

You can change every one of them and save the changes into a new default.

A RAW file is just data - basically a measurement of what we humans refer to as light as recorded by a light sensitive sensor. That is completely native to the sensor but meaningless to the eye.

To obtain an image some interpretation has to be undertaken in software. In the days of film chemicals were used for the same purpose.

In your other post you indicated you use, iirc, an IQ260. I think that such a level of imaging tool would make it desirable to have a more complete answer to your questions and a full understanding of how to get the very best results for your requirements. I would suggest that the most complete way to achieve that would be to take some one on one consultancy form your Phase dealer or directly from Phase One so that you can discuss your concerns and work through them with people who can give you the exact answers to your personal needs and explain why RAW file converters, like Capture One, are configured to behave as they do.

Of course you can strip out the adjustments offered as a starting point if you wish and set the default to be nothing more than just enough to show something that looks more or less like an image of the subject you saw through the viewfinder or, if you are using the screen on the back, as interpreted by the back based on some internal settings that help to present the sensor's data values into an image that the human eye can relate to.

I hope this helps you towards finding an extended understanding of how everything fits together.
