The same way you'd apply other meta data to a selection of images with the adjustments clipboard. Rating and color tag are just meta-data.

How does that work for removing a color tag or star rating (or any metadata for that matter)?

What that does no make clear is that if you select multiple image in the browser and have "Edit all selected variants" active then the keyboard entries for star rating and colour tags can be used to change all images at the same time. This includes clearing any values set.

See Preferences > Commands > Adjustments (Subset of commands).

You can quickly toggle "Edit All" on and off for changing single images differently from the rest.

Ok, I can see now how to remove a star rating: I toggle "edit selected variants" to on, select the images an press 0. To remove a color tag, I need to assign a keyboard shortcut to "Adjustments -> Colortags -> None" (because be default it doesn't have a keyboard shortcut). I can then use that keyboard shortcut to remove the color tags from all selected images.

But I still do not understand how I can remove a modification (be it metadata or anything else) from multiple images at once using the adjustment clipboard as harald_walker hinted. If I understand the adjustment clipboard right I can apply a modification of one image to another image but if the image doesn't have a modification (as it would be needed for removing something) I cannot apply "nothing" to another image. Maybe I am not seeing something obvious here, sorry.

Removing a colour (to make it "None") is, by default, "NumPad0".

So specifically the Zero on a keyboard's Number Pad. The Number Pad must be active.

Making number pad Active will vary from configuration to configuration, possibly quite a lot depending in the capability of the keyboard or kbd substitute device.

However there is a pre-defined possibility from the default preferences and it can be changed if something else would be more suitable.

When I look into the keyboard shortcut settings for "Colortag - None" it does not have Numpad0 assigned. It had nothing assigned at all for "None". It is a fresh install of Capture One. Maybe it was somehow able to detect that my keyboard doesn't have a numpad.

Possibly. Or maybe it's a Mac vs Windows difference? (I'm on Windows).

Of the keyboard I have all of them have a NumPad option although for some getting to it as part of the regular keyboard can be a little convoluted.
