If there weren't any difference between OSX client and OSX Server, don't you think they'd just be called the same thing? While it might be nice to process on your "souped-up" server, OSX server has no basis on which to set up an application like C1. A limited color engine, no camera drivers, and no way to allocate memory for the kind of processing that C1 does. I would suggest souping up another computer and using it solely for processing, because Apple would probably have to re-engineer their server OS to make this work.

You could consider to install OS X client on a separate partition or volume and restart the machine. See if it works for you this way.

Regarding OS X Server not serving you the way you would like. There are also log files in <user name>/Library/Logs which might help troubleshooting.
