I use a session based workflow so I may be mistaken in what I say below since it is a long time since I experimented with catalogues but this is what I believe to be the case:

In a session based workflow, settings are stored in settings files withing the image folder hierarchy - so simply copying that image file folder heiracrchy will copy the images and the adjustment settings (but not necessarily the session file)

However, within a catalogue based workflow, the image adjustmentn settings are stored within the catalogue database itself. The image files may be stored as referenced files (outside of the catalogue) or they may be stored within the catalogue. In the latter case, any image files left on your system after import to the catalog are just that - left over files - and are not used be CaptureOne.

As a consequence, when you 'copied' the files from the tablet to your desktop, there were no settings files to copy.

I believe the correct way to do this is to 'export' the files from the catalogue whch will create a set of files with their associated image adjustment files. This is done using "File->Export->Variants". I believe that this wil create a new session folder hierarchy and place your images (with the adjustments) into that heirarchy. You can then copy the whole hierarcy to your desktop or, if you want, you can just copy the image folders (with their subfolders).

I am not sure what mechanisms are available for creating a folder hierarchy for images directly as part of import. You may find that you need to export bit by bit in order to create a folder hierarchy that matches that on you desktop.

At home, I use C1P without a catalog, and just a single 'dummy' session, so I don't need to 'import', and my file system is my organization. But recently while traveling I installed C1 on a tablet, and used the default catalog setup. When I got home and copied all the new work to my desktop, the edits didn't come along. I thought C1 always put them in sidcar files, but apparently not.

How can I transfer the editing I did to those images on the tablet installation of C1? Do I have to export sidecar files somehow, and copy them over?

Catalogues keep the edit information in the catalogue database.

Your description suggests you just copied the files in Explorer. Is that correct?

You need to Export Originals and tick the "Include adjustments" option. Or, perhaps better depending on how you plan to organise things after export, export them as EIP files. EIP is basically a set of files including edits and potentially other associated files, that will keep everything together as to shift files around. Once they are where you need them you can split them open again.

You should find more information about this in the Help files.

Yes I just copied the whole file tree. Didn't realize that in catalog mode C1 puts all the edits in the database - exactly what I hated about Lightroom, and a big reason I originally switched to C1. I'll probably have to figure out how to export into sidecars.
