Why does my large library constantly access my hard drive?
I'm running the latest and greatest OS and my hard drive is a super fast RAID 0 Thunderbolt variety. Brand new catalog with 1.79TB of data, but it's so sloooooooooooooooowwwwwww with my hard drive constantly chugging away. Any thoughts or explanation?

If by the latest and greatest OS you mean High Sierra, you should remember that Phase One have not yet announced support for High Sierra in Capture One.

If not a HIgh Sierra compatibility thing, you might check the Activity Monitor memory tab. If you are pushing the limits of your RAM, then the OS could be constantly thrashing to write data in/out of RAM to disk.
