Don't want to be tethered
I don't use "tethered" but I cannot find a way to remove it from its default.
I went to 'preferences' 'capture' and unchecked all the 'enabled tether support' yet when i start a new session 'tethered' shows up as default. If perchance I forget to change the pull-down to 'untethered' then in my sessions is a 'capture' folder. It messes with my perfect world. I don't want that folder in there and I'm unable to remove it.

Sorry, but as far as I know you cannot remove the 'Tethered' folder itself or reset its name in Preferences. I sympathise but Cap1 does not offer this degree of customisation.
You can remove any of the Cap1 folders using Windows, but I think Cap1 will immediately regenerate them (if they are missing) in Session mode. If you rename 'Tethered' in Windows the renamed folder will be there but Cap1 can't see it (unlike ACDSee, for example).
I have been moaning about this in this forum but Phase One doesn't seem to be very interested.

I think I read two issues in this thread.
1. The default setting for a new session is 'Tethered' and this can not be changed. I confirm that this is the case as the other poster already said.
2. In case you accidently created a tethered session - which includes a Capture folder - instead of an untethered session, there is a workaround to remove the Capture folder.
How to?
Close CO7 > go to tethered session folder in Explorer > remove Capture folder and session (*.cosessiondb) file > start CO7 > create a new untethered session with same name and location as the original.
CO7 will now only created the session file, not the Capture folder and leave other files and folders alone.0
