What is the best setting for preview image size in the preferences when using a 27" 5K IMAC.

  If you are viewing the current image full-size (i.e.. using the full size of the display) then set the preview to match your screen resolution. If, like me you have adjustment panes and image browser open as well then I would set the preview resolution to be one-step lower than your screen. There's no point in setting it to the max if you are not viewing it full-size.
