Canon 5D Mk III Tethering
Don't know if this helps anyone, but I was able to use Capture One 6.4 in conjunction with EOS Utility to at least have the ability to view images in real time as I shot "tethered".
1) In EOS Utility I set the Linked Software registered to Capture One.
2) Set a destination folder for the shoot in EOS Utility
3) In Capture One I disabled the supported camera(s) in the capture preferences (so it won't try to establish a connection).
4) Open the folder set in step 2. Images will appear in this folder as they are shot.
Hope this helps until we get full tethered support.

Although this KB article was written for Capture One 4 prior to tethering being implemented the workflow is just as you have described above and is the best way to use the software with a Tethered workaround on unsupported cameras.
