The first question is to ask why there are six sliders on the levels tool?

There are only 5 sliders on the levels tool. Two black point, two white point and a gamma slider.

I know how to do a levels adjust on the basis of shifting sliders and reviewing the outcome and I know what the histogram is showing but I can't get my head around what the sliders at the top of the histogram are for/doing.

If I have a shot where the brightness values are hard-up against the right-hand side of the histogram I will use the upper right-hand side slider to bring the values back into the histogram. Likewise I would use the upper left-hand side slider to increase the brighness of the blacks.

Think of the two top sliders as an extension of the bottom two outer sliders, when you wished you could move the bottom ones out and you can't, move the top two in.

I would also like to know the difference between the top histogram and the levels one. Why do they look so different?

The histogram at the top of the tool pallet is showing you the current values of the edited image. The levels histogram is showing you the raw values in the original unedited image.

    Hope this helps.

Well, I'm not so sure on this.
My histograms look very different with absolutely no edits at all.
