Preview Image Size setting
I'm about to move from a system with a 27inch (2560 x 1440) display to an iMac 27inch 5K Retina screen. What is the recommended Preview Image Size for this display?

The recommendation is usually to match the display size. So with your 2560 x 1440 display it would be recommended to use 2560. With the 5K display it would be whatever the long side pixel count is on that display.

MAN I've changed the preview size all the way down to 640 and Capture One is Still SUPER SLOW 0 -

That may be counterproductive, because at the zoom to fit setting, Capture One can’t just show you the preview: at 640 pixels it would be too small to fit (unless your display is really small!) So whenever you display an image in the viewer, instead of being able to show you the already existing preview, Capture One has to refer to the actual raw file and generate something to show you.
