missing *.cosessiondb file
Since 2021, I've noticed a few of the folders are missing the following:
the folder structure and the *.cosessiondb file.
I've gone in and created the file structure so that the Capture, Output, Select and Trash folders are there and moved the images to the Capture folder.
Now that there is no *.cosessiondb file I cannot open the images in those folders.
How do I create a *.cosessiondb file?

All images were imported using C1 to either create a session or import files. Both appears to do the same as in not creating the folders and *.cosessiondb file.

The Capture folder is inside a "session folder", right? I usually use the session name for it myself. I create my session folders manually (or automatically using Photo Mechanic). Inside that session folder I have Photo Mechanic create a Capture (sub)folder and populate it with image files. So far my workflow matches your actions.
That session folder and Capture (sub)folder with images is not a session in Capture One lingo. Neither does creating the three sibling (sub)folders Output, Select and Trash make it a Capture One session. You are absolutely right about the missing .cosessiondb file. At this point your workflow differs from mine, here is what I do:
In Capture One : File->New Session. Then I enter my preferred values in the New Session dialog and click OK.
Name: the name of said session folder (where my Capture folder is)
Location: path to session's parent folder, I have many session folders (siblings) in one parent folder.
Template: Blank (the default, no need to change unless you know what you want here).
When I click OK, Capture One creates the three missing folders, and it creates the session.cosessiondb file, all inside the session folder . A little extra work is required if images are in Capture/subfolder(s), I usually add them to the list of Favorite folders (left hand pane in my setup).
