I like unrestrained cropping and did not like how the crop tool always defaulted to original. With the last release, I could at least select all the images I was working with, select unrestrained, and unrestrained would "stick" for all those images. Now, however, that is not the case. I have to go to the crop tool and select unrestrained for each image individually. That is a real step backwards for me. Is there a workaround or a way to set unrestrained as the default. I don't like C1 to tell me how I must work.

  yes, in preferences. select what you would like to be the default.
