    Sorry not to have noticed this post earlier. It's not immediately intuitive, but what opens when you connect a camera to a Mac is actually controlled by the Image Capture app. The quickest and easiest thing I had to hand to demonstrate this was my iPad, so that's what you see in this screenshot.

    Open Image Capture, then connect the camera. You should see the camera appear in the Devices list on the left. Select that device in the left hand panel, then click the ... button in the toolbar to get a dialog box where you can control what opens when that camera is connected. Mine is set to No application, as you can see, but the drop down list offers other options like this  

    ... and by clicking Other... you can add more.

    Try setting that to No Application. 

    Also my understanding is that the Canon app can compete with Capture One for control of the camera. You certainly need to makes sure the Canon app is not running when you try to connect your camera to Capture One, and unless you need it for other reasons, you could consider uninstalling the Canon app altogether.
