If you are new to Capture One then take a look at sessions. There is a good youtube video from Capture One that explains the difference between a catalog and sessions.
For me... I use only sessions!

Start with one catalog or session. I also recommend sessions over catalog for new users due to the relative simplicity of file management (a session can be used as a basic folder navigation tool, whereas catalogs require that images be imported prior to beginning to work). Any adjustments you make to an image in a session will be viewable by any other session viewing the same images. Catalogs, however, contain all the adjustment information; if you import the same image into two catalogs, the adjustments within one will not be reflected across the two.
