In the Import Images dialog, set your Destination to the 'specific folder'. In the Sub Folder field, set it to "[Image Year (yyyy)]-[Image Month (MM)]-[Image Day of the Month (dd)]" where the items in brackets are tokens. You may need to select the variation on the nomenclature by clicking the down arrow in the token. This will create subfolders based on the image-specific capture date EXIF data.

If you're looking to replace them with the current date (aka the date you're importing them), simply use the Current Year, Current Month, etc tokens instead. This will use the system's date rather than the capture date.

Ok so I create and save my user preference for sub folder as per your suggestion using 3 tokens image YYYY etc.
Still now everytime I import I still have to manually select the folder. It defaults to c:/users/pictures and the folder I want to use isn't in the recently used paths.

The last chosen folder will default to the Destination field after it's been chosen.
