I like the process gear icon too, so I have added it back to the toolbar, and it stays. Have you tried saving your workspace once you have customised the toolbar to your liking? (Window>Workspace>Save Workspace...)

Typically, workspaces that don't "stick" are caused by corrupt (even slightly) pref files. You can trash the cached preference file by running this command in Terminal without Capture One running:

    defaults delete com.phaseone.captureone10

This will return the application to a "fresh" state but maintain your custom presets and (of course) image adjustments and session/catalog documents. I recommend you save your workspace prior to running this command as it will reset to the default.

Forgot you can also go to the custom tool bar setup and then drag the gear up to the tool bar, or you can do like the other guy said go to the window and add it on the left although it is there with the icon of the real thin oval.

I lied about the oval that is the lens adj. sorry

in 10.2 go to window/workspace/default that brings the gear into the lower tool bar otherwise if you want it on the big tool bar on top
go to view/custom tool bar and drag it up there. The workspace 7 also does this.... meaning lower tool bar. Drives me crazy as well.
