Not sure if this is useful as I don't use this method....but rather than a button, there are B/W choices under the Exposure drop menu that would achieve this effect and can be easily reversed back to color. This is present under the Exposure tab, and you can add the exposure function to the Quick tab if you find this essential to your workflow.

I do still miss the B&W button. I use the Saturation slider in this fashion:

    Reduce Saturation to 0
    Adjust Exposure, Contrast, and Brightness
Return Saturation to normal (or plus a little)
    Go to next picture, repeat

This works, but is slower than pressing the B&W button and being able to instantly see all images with 0 saturation. It also causes another problem when I'm reviewing a set of images for final output. I like a set to have the same "look and feel", this also means the same value distribution. It is now impossible to quickly flip through all images in B&W without set and reset the saturation. Granted, I could copy the adjustment to 0, but if images in the set have slightly different saturations there's no way to return all to their for-print state.
