Where is Pick to reate new?

From the pdf download I want to define a skin tone. Page 57 says to "Mark up 'Pick to create new'". Only problem is I can't find Pick... Not one of P1's strong suits.

    If you go to the Skin Tone tool on the Color tool tab, you should find the option "Pick to create new" with a checkbox, which is by default unchecked. This allows you to APPLY existing skin tones.

    Check the box. This allows you to CREATE a new skin tone. Now, go with the cursor (now the Picker) to your image and select a surface you like to become the new skin tone and click on it. A dialog to enter the name for the skin tone will appear.
