I don't think this is particularly a Sony thing. My Nikons have Creative Photography (Scene Modes) too, although I never use them. I don't have a B&W one as such. But the point of raw is that you are getting what the camera sensor recorded and to produce a B&W image on your camera screen the camera is having to do stuff to the raw data. So when you import it into Capture One you are getting all the raw data (and that's a good thing, I would say). One of the good things with Capture One (or to be fair with many raw converter apps) and with shooting raw, is being able to control the way that it creates a B&W image. So you can adjust the relative levels of say Green and Red in the conversion. (I have the Pro version of C1, so I am assuming but not 100% certain that the same is available in the Sony Express version.) The downside, of course, is that whether you are working in B&W or in Colour, shooting raw always implies that you will have to do a bit more work to the files.

You could try getting the camera to record in raw + jpg. That way if your out-of-camera JPG is to your liking, you are done. If it isn't you can see whether you can do better starting with the raw file.

Also you can try getting C1 to apply a B&W style to the images at import - there are quite a few to choose from. That doesn't prevent you tweaking the image after import.
