Did output file timestamps change?
I was pretty sure I could use Capture One to create a batch of JPGs, then go back and make a few updates or variations and output those, and find the new files by sorting them by date.
Currently they're coming out timestamped with the date/time the image was originally taken. This is not really useful, and if it was always like this I'm really surprised I never noticed.
Did the behaviour change? Am I missing the location of a switch to change this behaviour?

Yup, that's the problem, thanks. I was working on an old archive on an external drive, and it was defaulting to Windows useless and unhelpful picture mode. Different columns, not showing either 'date modified' or even 'date created', both of which would show the current date. Rather it was showing only 'date' which is probably pulled from the EXIF.
