Suddenly can't assign star ratings
This just started last with about 200 raw photos that I imported. I will assign a star rating, then move to another photo and within a few seconds it will revert the rating back to 0. On every picture. Including old ones that already existed in the catalog. It hasn't done this before. I recently upgraded to v12, but have successfully rated photos since updating. All other edits that I make appear to be saved correctly, it appears that it's only the star rating that is reverting.
I'm using an up to date version of C1. The catalog is on an external disk attached directly to the computer, and has around 11k photos in it. I've verified the catalog, and no errors were found. I restarted C1, and was still having issues, so I restarted the computer, and am still having the issue.
Here's video of what it's doing. I press '1' to assign the photo a 1 star rating, then click the right button. A second after that, it resets the rating of the first picture back to 0. It's currently doing this with all photos in the catalog.

That's not something I have seen.
However since, from your description, it seems to be only the rating value, might it be a key problem on the keyboard. The zero key perhaps? Or an Undo command?
I know it seems unlikely but it is probably best considered and eliminated since doing so should be fairly simple.

I don't think it's that, the keyboard is working perfectly fine everywhere else. And a few times, it's taken 30 or so seconds to reset the rating to 0, long after I'd moved on from that picture. Thanks for the idea though.0 -

Ok, that seems to have eliminated that possibility.
I would ask about any auto Sync options for metadata but that seems unlikely based on your description of the problem.
I think a Support Case may be in order to find out what the Capture One Support team can suggest. Maybe the log files offer some clues.

I had opened a support ticket, but hadn't yet heard back when I posted this.
Auto Sync Sidecar XMP was set to "Full Sync". I set it to "Load", and that appears to have fixed the issue. I'm not sure what was resetting it though.

If you have it set to full sync, Capture One will be continually comparing the rating it holds with the rating in the XMP sidecar fie. There is a checkbox in the same section of the Preferences for "Prefer Sidecar XMP over embedded metadata" and with that selected C1 might continually undo what you set.
