How do I change only one thing at a time?

    You mention one way to copy and apply only one or a few but not all adjustments. In addition, if you go to the Adjustments tool tab, you find the Adjustments Clipboard. In the header text you see a tiny white triangle at its right. If you click on it you'll find an option Autoselect Adjusted. This is a toggle which is either active (check mark) or not (no check mark).

    When you uncheck this setting, it should stick to recent adjustments. I say 'should' but I feel I have not understood its dynamics completely.

    I looked at this. When I just change exposure the other things have a minus sign in front. does that mean that it knows that the only change is exposure, or do I have to go in and uncheck the other adjustments?

    There are main and sub topics in the adjustments list. A minus sign in front of a main topic indicates that few but not all subtopics are copied and will be applied. You have to go into it and deselect what you do not want to apply.
