Delete Catalog file
I did an import of my LR Catalog which finally completed after over 20 hours, so I now have one large C1 catalog and some collections folders which show up in the left panel. No obvious way of moving around those 27m + image files.
I am thinking of just using Capture One in sessions mode.
Can I just delete the Catalog file? What about the Previews?

I am not sure I understood your actual issue.
"27m" = 27 mega byte?
If you have not imported your images into the catalog file (so the images stay outside the catalog), then you could delete the catalog, preview folder etc.
Be sure you really want to use sessions instead of a catalog (do a little research first), as sessions are mainly designed for shots / photo sessions. I have not yet used them but have seen new users in this forum recently trying to start with sessions and then ending up with a catalog ... 😉
Maybe another option for you, you can create several separate catalogs.

The files are 27,000 + (almost all raw files) and are already in a folder structure being managed from the Lightroom Catalog. So I do not need to have another Catalog for managing the files.
I will just access the files directly from my existing folder structure and edit. So I have gone ahead and deleted the C1 Catalog that I created along with the preview files.0
