Firstly, just to double check with you, the images you are talking about are all RAW files aren't they?

It's sometimes easy to miss when something has flipped to another format ...

It sound like there may be some sort of internal problem with the catalogue or session file. (Whichever you use ...)

Try a Verification to see what happens.

If nothing is reported and the problem is still present create a Support Case and seek assistance from the C1 Support Team.

Based on what you describe one might expect the Log files to show something interesting but unless you might know what to look for they can be somewhat daunting to work through (and potentially not advisable to do so unless you have an understanding of what you are looking at!).

As a test of the theory, create a new small catalog or session and try the same settings and adjustment. Any difference?

I have this problem mostly with 10.0 and 10.1 BETA's
    I shot primarily with A7r
(also with some other Defaults i set manually, like NR, but Film Curve is most annoying)
    in 10.1 it's fixed apparently.
