After purchasing the Capture One software for Nikon, what happens if I change my camera, for example Canon, is the software still compatible or do I have to buy a license.

The Nikon version is valid and works for Nikon cameras only. If you buy a Canon body, you'll have to buy a licence for the "full" version of Capture One. There is no Canon version of Capture One up to now.

As others already said, you would be loosing on the possibilities of RAW-Editing for non-Nikon cameras.
But if you store the images of a non-Nikon camera as JPEG or TIFF, you could be able to use the CO Nikon version for those images (to some extent).
