Fn + left/right arrow – standard shortcuts don't work in Capture One

There are appropriate commands in the Select menu but no default Keyboard shortcut key defined.

I would assume that is because most of (perhaps all) the logical key combinations for such a function are already used for similar purposes that are considered more often used in a photo editing application.

The option exists to create a Keyboard Shortcut if required. Obviously then save the new Shortcuts definition to your own personalised definition name for later use.

Thanks! I just hadn't searched for the right term. Fn + left/right arrow didn't appear to be assigned to anything.

When I want to assign a custom shortcut, I find the easiest approach is to just enter the desired shortcut. If it was previously assigned to another command, C1 will let you know and give you the option of either using your shortcut (and eliminating the previous assignment) or canceling and entering another shortcut.
