Is there a preset in Capture one when shooting raw and jpeg to make the jpeg black and white and keep raw in color?

    see no way in c1 but you could set up your camera to BW as this setting is  ignored by c1 when rendering the raw file so your raw is displayed in color while you camera jpg is still BW
