What's the best way to match a color in my photo to an exact RGB/HEX color?

I'm loving the color tools that Capture One offers, but I can't seem to find an obvious way to change a color in my photo to a specific RGB or HEX value - perhaps for a product photo where the color should match a specific branding, for example, or maybe to help get better color harmony by trying to set shadows to a specific hue on the color wheel.
Most of the time I am fine with eye-balling it, but there are times when some sort of numerical entry for the hue would be useful. The only thing I can think of doing is to keep hovering over the area of the photo I'm interested in with the mouse and checking the RGB values at the top.

Why doesn't the CO team give an efficient answer to this question? I have the same doubt - as I'm sure the red in my image will match the red ex. from Coca-Cola?
